After more than 30 years of bartending and waitressing, Carie decided it was time to, in her own words, “pour into myself.”
That decision led to the creation of Seven-One-Sips in 2025. The business built not just around drinks, but around connection, creativity, and community.
“Seven-One-Sips is all about connection and experience,” Carie explained. “I bring over 30 years of bartending and waitressing knowledge to create a mobile bar that’s not just about pouring drinks — it’s about creating memories.”

Built on Experience and Heart
What makes Seven-One-Sips stand out isn’t just Carie’s decades of hospitality experience. It’s the personal touch she brings to every event.
From her signature décor and garnishes to her knack for creating the right atmosphere, each setup is customized to match the hosts’ style, whether elegant, rustic, or relaxed.
Her most popular offering is private event bartending, where she provides everything but the alcohol, including mixers, garnishes, creative drink ideas, and a beautifully arranged mobile bar.
She also offers custom drink consultations and themed mocktail menus for family-friendly and alcohol-free gatherings.
“Meeting new people and being part of their most special moments” is Carie’s is my favorite part of her work. “It’s rewarding to build something that reflects who I am and what I love doing.”
Growing With Every Pour
Since launching, Seven-One-Sips has quickly grown beyond its original concept.
Carie has rebranded, added tiered event packages, and built partnerships with other local small businesses.
She’s also working toward introducing a horse trailer bar setup — a stylish upgrade that will bring even more charm to outdoor events.
Her creativity shines year-round with seasonal drink menus:

A Memorable Moment
One of Carie’s favorite memories so far came from an outdoor wedding in Ellicottville.
“It took place right in the couple’s backyard,” she said. “The vibe was relaxed and full of joy — exactly what I love about small, personal events. It reminded me why I started doing this in the first place.”
Driven by Community and Creativity
Seven-One-Sips is truly a one-woman operation. Carie handles everything from setup to cleanup, often reusing jars and bottles to create eco-friendly, creative setups.
She credits her friends, family, and the local small business community — including The Hatch and Jamestown Community College — for inspiring her journey.
Her advice to other aspiring entrepreneurs?
“Prepare for a lot of trial and error,” she said, “and more errors than you expect. You can’t make everyone happy, so focus on doing what feels right for you. Ignore the haters, learn from every mistake, and celebrate the little wins.”
Looking Ahead
Carie’s goal is to keep expanding Seven-One-Sips by perfecting her craft, building new partnerships, and adding that long-awaited horse trailer bar to her setup.
Ultimately, she hopes to turn her business into something lasting that her kids might one day take over.
